Sugarless Muffins

Now that fields are in greens and yellows, whites and reds I start feeling the urge to dress in happier colors than those the Winter has used as to. Let’s leave behind the blacks and browns and go for spring tones in our wardrobe! The problem here is that some kilos have been hiding behind the clothes during the cold months and now is the time to get rid of them…

Sugarless Muffins

I plan to eliminate kilos starting with a soft shocking system, hahaha. A radical plan would be to much for me to handle. Step by step and little by little I will accomplish my goal too but without a bit of stress! What I mean is that, to start with, Sugarless Muffins will help me with my morning breakfast; I will get the energy I need from them but they are baked with honey instead of sugar, oil instead of butter and half the flour is whole wheat.

Sugarless Muffins

This is just the start of my new Spring vital purposes:

  1. Eat healthier and less food in every daily intake.
  2. Have 5 meals a day.
  3. Besides the walking exercise I do daily, go for a bike ride at least 3 mornings per week.
  4. Substitute beers for red wine glasses and drink only 1 glass Saturday and 1 glass Sunday.
  5. Drink 2 litters of water per day.

Hopefully, I will get a flat stomach soon ;D

Sugarless Muffins

Recipe

Ingredients for 12 muffins: 150 grs. of whole wheat flour, 130 grs. of white flour, 3 teaspoons of baking powder, 2 large eggs, 4 tablespoons of honey, 1 cup of olive oil (0,4º), 1/2 a cup of milk, a pinch of salt and chocolate chips (you decide how many… I used 1/2 a cup)

  • Preheat the oven at 180ºC.
  • In a big bowl, place the flours, the baking powder and salt and stir until is all well mixed.
  • In another big bowl, beat the eggs with the honey, oil and milk until it becomes homogeneous.
  • Prepare the muffin liners.
  • Pour the flour mix into the wet ingredients bowl and carefully mix with a rubber spatula until you don't see the flour anymore.
  • Add the chocolate chips and pour the mix inside the liners. Leave a forth of the space free to let them grow.
  • Bake for 15 minutes aprox. or until a toothpick inserted in the middle of the muffin comes out clean.
  • Place on a wire rack and let them cool down.

Remember that depending on ovens, kitchen utensils and other variables they might bake slightly differently. Keep an eye on them!

Hi Nuria, what??? I can’t wear black? I’ll need to get a new wardrobe…Blacks hide a multitude of “sins”…
The muffins sound good and the photography is beautiful. I am starting my photography course this morning.
