Chocolate and Banana Cake with Hazelnuts

It works for me :D. Whenever I want to slow it down and relax and have a peaceful time… I Bake a Cake. Having my hands and brain occupied in something so simple and creative feels like therapy.

This one is such a moist and spongy cake, your kids will love it, your parents will love it, your couple will love it… YOU WILL LOVE IT!

It seems I’m using my same favorite ingredients in all my sweet recipe treats, sorry about that but I love bananas, chocolate and hazelnuts and you will love it too when you bake this simple and delicious cake! You have probably eaten a lot of Chocolate and Banana cakes but until you try this one you will not be able to say: “I ate a Chocolate and Banana Cake with hazelnuts”! The ONE!

I didn’t show it in the pictures but the mold I used was a 23×33 cm. one; a brownies one would work here :D. Mine was made out of silicone and maybe it took a bit longer to bake, if you use a metal one the baking might be a bit shorter.

Recipe

Ingredients for 10 to 12 servings: 245 grs os flour, 400 grs of white sugar, 75 grs of unsweetened cocoa powder, 50 grs of smashed toasted hazelnuts, 1 1/2 teaspoons of baking powder, 1 1/2 teaspoons of baking soda, a pinch of salt, 2 large eggs, 240 ml of warm water, 2 1/2 medium ripe mashed bananas, 120 ml of milk, 120 ml of olive oil (not extra virgin; a soft one), 1 teaspoon of vanilla extract.

  • Preheat your oven at 180ºC.
  • Spray your mold (23x33 cm) with some olive oil. If you use a silicon one, there's no need.
  • In a large bowl pour the dry ingredients: flour, sugar, cocoa powder, hazelnuts, baking powder, baking soda and salt. Whisk and reserve.
  • In another large bowl whisk the eggs, pour the water and mix, add the peeled and smashed bananas, the milk, the olive oil and the vanilla extract and stir the mixture.
  • Pour the wet ingredients into the dry ingredients bowl. Mix with a silicone spatula until you get an homogenous batter.
  • Pour the batter inside the mold. Place in the oven and bake for 40 minutes
  • Notice that depending on the mold, the oven and other variables the cake might take more or less than expected. Just introduce a toothpick in the middle of the cake and if it comes out clean it means that is baked.
  • Remove from the oven and let it cool down over a wire rack.
  • Cut in big dices and serve. Enjoy :D. Be sweet!
