Fried egg with Mushrooms

Today’s Sunday… a lazy Sunday. March has started and if feels like spring already. We have gone for a walk by the river side, we’ve seen two male pheasants fighting for a female… couldn’t see her at all. She was probably hidding behind the bushes. We’ve heard all kind of little tinny birdies flying up and down and in circles… which reminds me about my Eurodisney Experience at the Space Mountain… but that is another story.
I want to shout: SPRING IS HERE!!!! FINALLY!
After the 1 1/2 hour walk, get back home and dust a chair at the terrace to seat and feel the sun in my face with a fresh delicious beer on the table. It’s all about small pleasures :D.
Eggs are also small pleasures (except for the Ostrich one ;D). Absolutely delicious, healthy and easy to cook. Do you feel lazy after the second beer and don’t know what to do for lunch?
Grab a mushrooms preserved jar, some salad, slices of molded bread with cereals, some garlic cloves, thyme, olive oil and salt… hey and don’t forget the eggs! Fresh, ecological, quail’s, pheasant’s, hen’s…
Enjoy life… and eggs! And beers!… and Sun! What I said: small pleasures :D

Recipe

Procedure: Pour a bit of olive oil in a non stick pan. Toast the bread in the toaster. Make the whole with a round mold. Place the toast in the pan and put the egg in the hole. When cooked, add some salt and place in the plate.
In another sauce pan pour a bit of oil, add the smashed garlic cloves, pour the mushrooms (previosly strained and dry), cook for 3 minutes aprox., add 2 little branches of thyme and some salt. Cook for 30 seconds.
Present in a flat large dish.

I have not had an ostrich egg before Nuria, I am sure it would make a hearty lunch in the Spring sunshine.

Isn’t it lovely to have spring sunshine! We’re not quite warm enough to eat outside… but close.
